  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup (133 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk or dairy-free alternative

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. In a stand mixer, cream together butter, granulated sugar, and brown sugar until fluffy. Mix in egg and vanilla.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add to the butter mixture until just combined.
  4. Set aside 2 cups of dough for topping; press remaining dough into the prepared pan.
  5. Bake crust for 15 minutes until lightly golden.
  6. Prepare the filling by mixing cranberries, granulated sugar, cornstarch, orange zest and juice in a bowl; pour over crust.
  7. Crumble reserved dough on top and bake for an additional 45 minutes.
  8. Cool completely before drizzling with vanilla glaze made from powdered sugar mixed with milk and vanilla.
