  • 5 Tablespoons unsalted butter
  • 3 Tablespoons heavy cream
  • Pinch of salt
  • Optional: 1 teaspoon orange or vanilla extract
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. Melt the unsalted butter in a small saucepan over low-medium heat. Add heavy cream and stir to combine.
  2. Stir in a pinch of salt and optional extract; set aside.
  3. Melt white chocolate over a double boiler until smooth, keeping temperature below 105°F.
  4. Remove from heat and gently mix in the butter and cream mixture.
  5. Fold in cranberries and pistachios, cover with plastic wrap, and let sit at room temperature for an hour before refrigerating for 2-3 hours until firm.
  6. Scoop out portions and roll into one-inch balls; clean hands with paper towels if needed.
  7. Roll each truffle in powdered sugar until coated.
