  • 1 cup shredded mild or medium cheddar cheese
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups cracker crumbs (Ritz or Keebler Club)
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Thaw broccoli florets if frozen, drain well, and chop into bite-sized pieces.
  3. In a bowl, mix thawed broccoli with 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt until well combined. Transfer to a greased baking dish.
  4. Top with remaining cheddar cheese.
  5. In a separate bowl, mix cracker crumbs with melted butter until moistened; sprinkle over the casserole.
