  • 50g chicken sausage
  • 160g baby tomatoes (1 cup), halved
  • 150g uncooked orzo (1 cup)
  • 1 cup milk
  • 2 tbsp tomato puree
  • 1 tsp Cajun spice
  • Salt and pepper to taste

Instructions

  1. In a large pan over medium-high heat, cook diced chicken and sliced chicken sausage for 3-5 minutes until lightly browned.
  2. Add halved baby tomatoes and cook for an additional 3-5 minutes until softened.
  3. Mix in tomato puree and Cajun spice, ensuring even coating.
  4. Stir in uncooked orzo, milk, and half a cup of boiling water. Bring to a boil, then reduce to simmer.
  5. Cook for 8-10 minutes, stirring occasionally until orzo is tender and the sauce thickens. Add more boiling water if needed.
  6. Season with salt and pepper before serving.
