  • 300g rotini pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan
  • Salt & pepper

Instructions

  1. Cook the rotini pasta according to the package directions. Add the broccoli florets in the last three minutes of cooking. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until golden brown.
  3. Stir in the minced garlic and cook until fragrant, then add heavy cream, chicken broth, grated Parmesan, salt, and pepper. Simmer until slightly thickened.
  4. Combine the drained pasta and broccoli with the creamy sauce in the skillet, tossing well to coat.
  5. Serve hot, garnished with fresh parsley and extra Parmesan if desired.
