  • 2 cups chopped carrots
  • 1 ½ cups chopped celery
  • 1 cup chopped onion
  • 6 cups low-sodium chicken broth
  • 2 cans cream of chicken soup
  • ½ cup butter
  • ¼ cup all-purpose flour
  • 1 teaspoon chicken bouillon base
  • ½ teaspoon coarse ground black pepper (plus additional for seasoning)
  • ¼ cup water or milk
  • Salt to taste
  • 2 tablespoons fresh chopped parsley (optional garnish)

Instructions

  1. Melt the butter in a large pot over medium heat. Add carrots, celery, and onion; sauté until tender.
  2. Sprinkle flour over the vegetables, stirring for 2-3 minutes.
  3. Gradually add chicken broth and bouillon base; bring to a boil.
  4. Submerge chicken breasts in the broth; cover and simmer until cooked through.
  5. Remove chicken, shred it, and add egg noodles to the pot; cook until tender.
  6. Whisk cream of chicken soup with water/milk; stir into the pot until creamy.
  7. Season to taste and garnish with parsley before serving.
