  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 1 tbsp olive oil
  • 1/2 tsp crushed red pepper
  • Salt and black pepper (to taste)
  • 1 1/2 cups medium shells (dried pasta)
  • 8 oz fresh chicken sausage
  • 2 cloves garlic (minced)
  • 1/2 tsp granulated sugar
  • 1/2 cup half & half
  • 4 cups fresh baby spinach
  • 1/3 cup finely grated Parmesan cheese
  • Fresh lemon wedges (for serving)

Instructions

  1. Prepare the vegetables by quartering the cherry tomatoes and chopping the red bell pepper and yellow onion.
  2. In a large skillet, heat olive oil over medium heat. Add tomatoes, bell pepper, onion, salt, and crushed red pepper. Cook for about 7-8 minutes until softened.
  3. Boil salted water in a pot and cook medium shells according to package instructions until al dente.
  4. Add chicken sausage and minced garlic to the skillet with vegetables; cook for about 5-6 minutes while breaking the sausage into smaller pieces.
  5. Mix in granulated sugar and pour in half & half; stir until incorporated.
  6. Add fresh spinach to the skillet and stir until wilted.
  7. Transfer cooked pasta using a slotted spoon into the skillet; reserve some pasta water beforehand. Stir well to combine everything.
  8. Stir in Parmesan cheese; adjust consistency with reserved pasta water if needed. Season with salt, pepper, and finish with lemon juice.
