Instructions

  1. In a saucepan, whisk together egg yolks, sugar, and cornstarch until smooth. Gradually add milk while whisking continuously. Cook over medium heat until thickened (5-7 minutes). Stir in butter and vanilla; set aside to cool.
  2. In a mixing bowl, combine glutinous rice flour, additional sugar, and cornstarch. Gradually add water until a smooth batter forms. Steam the mixture in a lined steamer basket for about 20 minutes.
  3. Once cooled slightly, dust hands with cornstarch and shape mochi by flattening dough and placing custard in the center; seal and roll in crushed cookies.
  4. Chill in the refrigerator for at least an hour before serving.
