  • 1/2 cup breadcrumbs
  • 1 egg
  • 8 oz mushrooms (sliced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Olive oil and butter for cooking
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp dried thyme
  • Fresh parsley (chopped) for garnish

Instructions

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, grated Parmesan cheese, minced garlic, salt, black pepper, and dried thyme until well mixed.
  2. Form small meatballs about 1 inch in diameter and set aside.
  3. Heat olive oil in a frying pan over medium heat; sear the meatballs until golden brown on all sides and remove from the pan.
  4. In the same pan, melt butter and sauté mushrooms until tender; add minced garlic.
  5. Pour in heavy cream and chicken broth; bring to a simmer before adding back the meatballs. Cook for another 10 minutes.
  6. Serve garnished with fresh parsley.
