  • 1 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning

  • 1 cup heavy cream
  • 9-ounce package refrigerated cheese tortellini
  • 2 cups cooked chicken breast, diced or shredded
  • 4 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft (about 4-5 minutes). Stir in minced garlic for an additional minute.
  2. Add sun-dried tomatoes and cook for 2 minutes. Pour in chicken broth and bring to a simmer. Season with Italian seasoning, salt, and pepper.
  3. Stir in tortellini and cook according to package instructions (3-5 minutes). Add cooked chicken and fresh spinach; cook until spinach wilts (about 2-3 minutes).
  4. Reduce heat to low. Slowly incorporate heavy cream while warming gently. Add grated Parmesan cheese until melted. Adjust seasoning if needed.
