  • 3 lb chuck roast (trimmed if needed)
  • 2 tbsp steak seasoning
  • 1 tbsp dried thyme
  • 1 cup beef broth
  • â…“ cup water
  • 1 tbsp cornstarch
  • 2 lbs potatoes (optional)
  • 1 lb carrots (optional)
  • 1 yellow onion (optional)

Instructions

  1. Season the chuck roast with oil and a mixture of steak seasoning and thyme.
  2. Sear the roast in a hot skillet for 2–3 minutes on each side until browned.
  3. Pour beef broth into the skillet to deglaze, then add it to the slow cooker over the roast.
  4. If using vegetables, prepare them and place them on top of the roast.
  5. Cook on low for 7–8 hours or high for 3.5–4 hours until tender.
