  • 1 cup uncooked jasmine rice
  • 1 (14 oz) can coconut milk
  • 4 cups chicken broth
  • 2 tsp thyme
  • 1 TBSP green curry paste
  • 1 TBSP ground ginger root
  • 1 TBSP garlic powder
  • 2 TBSP fresh chopped basil (or 2 tsp dried basil, or 2 TBSP jarred pesto)
  • Lemon or lime for garnish

Instructions

  1. Gather all ingredients, ensuring your chicken is cooked and chopped into bite-sized pieces.
  2. In a slow cooker, combine all ingredients except for lemon or lime. Stir well to mix everything evenly.
  3. Cover and set the slow cooker to LOW heat. Cook for approximately 3 hours or until the rice is tender.
  4. Once cooked, garnish with a squeeze of lemon or lime juice and top with fresh basil before serving.
