  • 23 pounds boneless chuck roast
  • 1 tablespoon avocado oil
  • 4 dried Guajillo chiles
  • 56 Chipotle chilis in adobo
  • 1 small red onion
  • 32 ounces beef stock
  • 14.5 ounce can Fire roasted diced tomatoes
  • ¼ cup apple cider vinegar
  • corn or flour tortillas

Instructions

  1. Sear the beef: Heat avocado oil in a cast iron skillet over high heat. Season the beef with salt and pepper, then sear for 5-6 minutes on each side until browned.
  2. Combine ingredients: Transfer the beef to the crockpot and add Guajillo chiles, Chipotle chilis, sliced onion, garlic, beef stock, tomatoes, vinegar, and spices. Stir well.
  3. Slow cook: Cover and cook on low for 8 hours.
  4. Shred beef: After cooking, remove the beef from the crockpot and shred it using two forks.
  5. Blend sauce: Remove bay leaves and cinnamon stick from the pot; blend remaining sauce until smooth.
  6. Mix beef with sauce: Return shredded beef to the crockpot with some sauce to keep warm.
