  • 1 cup frozen corn
  • 210 ounce cans fire roasted tomatoes and green chiles
  • 215 ounce cans cannellini beans
  • 1/2 cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz cottage cheese (blended)

Instructions

  1. Prepare the slow cooker by adding all ingredients except cream cheese and cottage cheese. Stir to combine and cover.
  2. Cook on low for 4–6 hours or high for 3–4 hours until chicken is cooked through.
  3. Remove chicken and shred it using forks. Whisk in cream cheese until smooth.
  4. Return shredded chicken to the slow cooker, cover, and cook on low for an additional 30 minutes.
  5. Stir in blended cottage cheese before serving.
