  • 2 tbsp olive oil
  • 3.5 cups vegetable broth
  • 1 medium jalapeño pepper
  • 1 cup corn (fresh, canned, or frozen)
  • 3/4 cup dried red lentils
  • 15 ounces tomato sauce
  • 1 medium bell pepper (red or green)
  • 15 ounces black beans
  • 15 ounces red beans
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • Optional toppings: crushed tortilla chips, sliced avocado, sour cream, diced jalapeños, chopped red onion, shredded cheddar cheese, fresh cilantro

Instructions

  1. Chop the onion, jalapeño pepper, and bell pepper.
  2. In a skillet over medium heat, sauté the onion in olive oil until translucent. Add the jalapeño and cook until fragrant.
  3. Combine all ingredients in the crockpot: vegetable broth, sautéed onions and jalapeño, corn, lentils, tomato sauce, beans, and spices.
  4. Cover and cook on low for 8 hours or high for 4 hours until lentils are tender.
  5. Serve hot with desired toppings.
