  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix
  • 1/2 cup milk
  • 4 oz whipped topping
  • 1 medium banana, chopped
  • Nilla wafers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, oil, granulated sugar, and powdered sugar until fluffy. Add the egg and Butter vanilla emulsion; mix well.
  3. In another bowl, combine flour, salt, and baking powder. Gradually add to the wet mixture until combined.
  4. On a parchment-lined baking sheet, drop spoonfuls of dough about two inches apart. Bake for approximately 8 minutes or until lightly golden.
  5. While cooling, whisk together the instant pudding mix and milk in a separate bowl until thickened. Fold in whipped topping gently.
  6. Once cookies have cooled completely, top each cookie with the banana cream mixture and garnish with chopped bananas and a Nilla wafer.
