  • 1/2 cup softened butter
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1 tbsp corn starch
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries
  • 11.5 tbsp blueberry jam
  • 3 tbsp butter (for streusel)
  • 2 tbsp brown sugar (for streusel)
  • 2 tbsp granulated sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • a pinch salt (for streusel)
  • a pinch cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, combine flour, corn starch, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the fresh blueberries.
  4. Dollop blueberry jam onto the cookie dough and swirl gently to create swirls of jam.
  5. Scoop out equal-sized balls of dough onto the prepared baking sheet and top generously with streusel (made by combining butter, sugars, flour, salt, and cinnamon until crumbly).
  6. Bake for about 13-14 minutes or until edges are lightly golden. Cool on the baking sheet for at least 15 minutes before enjoying.
