  • 2 1/4 cups bread flour
  • 3/4 cup cake flour
  • 1 tsp salt
  • 1 cup warm milk
  • 3 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • 2 tsp instant yeast
  • 1 egg
  • Oil (for frying)
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 3 potatoes, peeled and diced
  • 0.3 lbs ground beef
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 3 cubes Japanese curry roux
  • 1 cup water
  • 1 tbsp cornstarch
  • 1 egg (beaten)
  • 1 1/2 cups panko/breadcrumbs

Instructions

  1. In a skillet over medium heat, sauté chopped onions in vegetable oil until translucent.
  2. Add diced carrots and potatoes; stir in ground beef until browned. Season with soy sauce and ketchup.
  3. Break up Japanese curry roux into pieces; add to the skillet with water and simmer until thickened.
  4. In a mixing bowl, combine bread flour, cake flour, salt, warm milk, butter, sugar, yeast, and egg to form dough.
  5. Knead dough until smooth; place in an oiled bowl to rise for about an hour or until doubled in size.
  6. Punch down the dough; divide into portions and roll flat. Place filling in the center and seal edges tightly.
  7. Heat oil in a pan; dip each bun into beaten egg then coat with panko before frying until golden brown on all sides.
  8. Remove from oil using a slotted spoon; drain on paper towels and serve warm.
