  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Pinch nutmeg
  • 3/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 325°F. Soak whole dates in hot water while preparing the batter.
  2. In a large bowl, sift together cake flour, baking powder, cinnamon, salt, and nutmeg.
  3. In another bowl, whisk together vegetable oil, brown sugar, honey, eggs, and vanilla until fully combined.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Drain and chop soaked dates; fold them along with walnuts into the batter.
  6. Grease a loaf pan with nonstick spray and pour in the batter.
