  • 2 lbs beef chuck, cut into 1 ½-inch cubes
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 cup red apple vinegar (or additional broth)
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 3 potatoes, peeled and diced
  • 2 cups all-purpose flour (for dumplings)
  • 1 tbsp baking powder
  • ½ tsp salt (for dumplings)
  • 3 tbsp cold butter, cubed
  • ¾ cup milk
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper; sear until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery until softened.
  3. Stir in flour; cook for 1–2 minutes. Add beef broth and apple vinegar; scrape the pot's bottom.
  4. Return beef to the pot along with diced potatoes. Bring to a boil then reduce heat to low. Cover and simmer for 1 ½ to 2 hours.
  5. For dumplings: Mix flour, baking powder, and salt in a bowl. Cut in butter until crumbly; add milk and parsley.
  6. Drop spoonfuls of dumpling dough onto the stew; cover tightly and cook for 15–20 minutes until puffed.
