  • 1/3 cup pistachio cream (or pistachio butter)
  • 1 cup corn flakes
  • 2/3 cup chocolate chips (semi-sweet or milk)
  • 1 tsp coconut oil
  • Chopped pistachios (for garnish)

Instructions

  1. Place 6 silicone muffin cups in a muffin tin.
  2. In a microwave-safe bowl, melt 1/2 cup chocolate chips and 2/3 tsp coconut oil in intervals until smooth.
  3. Coat the muffin cups with melted chocolate, ensuring even coverage on the sides and bottom. Freeze to set.
  4. Crush corn flakes in a zip lock bag using a rolling pin and combine with pistachio cream in a bowl until well mixed.
  5. Divide the filling among the muffin cups, pressing down gently.
  6. Melt remaining chocolate with another teaspoon of coconut oil and top each filled cup with it.
  7. Garnish with chopped pistachios and chill in the fridge for at least 30 minutes before serving.
