  • 1/2 cup Greek yogurt
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp almond extract
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups cherries (fresh or canned)
  • 1 tbsp cornstarch
  • 1/2 cup sliced almonds
  • 1/2 cup confectioner’s sugar
  • 1 to 2 tbsp cream

Instructions

  1. Preheat your oven to 350°F (177°C) and prepare an 8½-inch loaf pan with parchment paper and nonstick spray.
  2. In a large bowl, mix eggs, Greek yogurt, buttermilk, melted butter, vanilla extract, almond extract, and sugar until smooth.
  3. In another bowl, combine flour, baking powder, and salt; sift it into the wet mixture.
  4. Toss pitted cherries in cornstarch before folding them along with sliced almonds into the batter.
  5. Pour the batter into the prepared pan and top with reserved cherries and almonds.
  6. Bake for about 50 to 60 minutes or until a toothpick comes out clean.
  7. Cool completely on a wire rack before drizzling with almond glaze.
