  • 1 medium red onion (quartered and thinly sliced)
  • ½ cup extra-virgin olive oil
  • 2 lemons (zest and juice)
  • 2 tablespoons red apple vinegar
  • 2 tablespoons capers (drained and roughly chopped)
  • 1 teaspoon minced garlic
  • Fresh oregano leaves (for garnishing)
  • Fresh parsley leaves (roughly chopped, for garnishing)
  • Kosher salt (to taste)
  • Freshly ground pepper (to taste)
  • Red pepper flakes (generous pinch, optional)

Instructions

  1. Trim any limp leaves from the celery stalks and coarsely chop the healthy leaves. Slice the stalks into ¼-inch pieces on a diagonal.
  2. In a large mixing bowl, combine the sliced celery and red onion.
  3. In another bowl, whisk together olive oil, lemon zest, lemon juice, red apple vinegar, capers, minced garlic, salt, pepper, and optional celery seed until well blended.
  4. Pour the dressing over the celery mixture and toss to coat evenly.
  5. For enhanced flavor, cover and refrigerate for at least 1 hour before serving.
