  • 1 can (400 ml) coconut milk
  • 1 tablespoon olive oil
  • 1 tablespoon fresh ginger, minced

  • Juice and zest of 1 lime

  • 1 ½ cups jasmine rice

  3. Stir in red curry paste and cook for another minute.
  4. Gradually whisk in coconut milk along with lime juice and zest; simmer gently for 3-5 minutes.
