  • 3 cups uncooked pasta
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup halved little tomatoes
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar

Instructions

  1. Cook pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cool water.
  2. In a jar with a lid, mix together the dressing ingredients: red apple vinegar, olive oil, Dijon mustard, minced garlic, chopped parsley, dried oregano, brown sugar, salt, and pepper. Shake well to combine.
  3. In a large mixing bowl, combine the cooled pasta with chopped bell peppers, red onion, Kalamata olives, cucumbers, halved tomatoes, and crumbled feta.
  4. Drizzle the dressing over the salad and toss until everything is evenly coated. Adjust seasoning if needed.
  5. Serve immediately or refrigerate for at least an hour to enhance flavors.
