  • 2 tbsp extra virgin olive oil
  • 1.5 lbs lean ground beef
  • 1 large yellow onion, finely diced
  • 45 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil (or 2 tbsp fresh, chopped)
  • 1/2 tsp red pepper flakes
  • 28 oz can crushed tomatoes
  • 15 oz can diced tomatoes, undrained
  • 6 cups beef or vegetable broth
  • 1012 lasagna noodles, broken into pieces
  • 1 cup whole milk or heavy cream

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the ground beef and drain excess fat.
  2. Add diced onion and cook until translucent. Stir in garlic, oregano, basil, and red pepper flakes; sauté until fragrant.
  3. Pour in the broth and scrape up any browned bits from the pot. Mix in tomato paste followed by crushed tomatoes and diced tomatoes.
  4. Bring to a gentle boil then reduce heat to low and simmer for 30–60 minutes.
  5. Add broken lasagna noodles directly to the soup and cook uncovered for about 10–12 minutes until al dente.
  6. Stir in milk or cream before serving.
