  • 2.5 cups kale (stems removed, thinly sliced)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup Parmesan cheese (freshly grated)
  • 1/4 cup sun-dried tomatoes (oil-packed, julienned)
  • 1/3 cup olive oil
  • 2 tbsp basil paste
  • 3.5 tbsp white balsamic vinegar
  • 1 tbsp garlic (minced)
  • Salt and pepper to taste

Instructions

  1. 1. Cook pasta in salted boiling water according to package instructions until al dente; drain and set aside.
  2. 2. Remove stems from kale leaves and slice into bite-sized pieces.
  3. 3. In a mixing bowl, whisk together olive oil, basil paste, vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and pepper.
