  • 2 tablespoons olive oil
  • 1 pound ground turkey or chicken
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, minced
  • 24 ounces spaghetti sauce
  • 1 quart beef broth or chicken broth
  • 15 ounces canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup dry ditalini pasta
  • 15 ounces dark red kidney beans, drained and rinsed
  • 15 ounces great northern beans, drained and rinsed

Instructions

  1. In a large stock pot, heat a tablespoon of olive oil over medium-high heat. Add the ground turkey or chicken, breaking it up as it cooks until browned. Drain excess fat and set aside.
  2. Add another tablespoon of olive oil to the pot. Sauté the onion, carrots, and celery until onions are translucent, about 5–6 minutes. Stir in minced garlic for an additional minute.
  3. Return the cooked meat to the pot. Add spaghetti sauce, beef broth or chicken broth, diced tomatoes, and seasonings. Bring to a boil, then reduce heat to low and simmer for 15–20 minutes.
  4. Cook ditalini pasta according to package instructions until al dente; drain.
  5. Stir the cooked pasta into the soup along with both cans of beans. Cook for a few more minutes to heat through.
  6. Serve warm, garnished with freshly grated cheese if desired.
