  • 1 cup fresh strawberries, finely chopped
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup buttermilk (or milk + 1 tsp vinegar)
  • 2 cups powdered sugar
  • ¼ cup strawberry puree
  • 2–3 tbsp milk (adjust for consistency)
  • ½ tsp vanilla extract
  • Fresh strawberries (whole or halved, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased and floured 9-inch round cake pans.
  2. In a large bowl, combine the strawberry cake mix, chopped strawberries, vegetable oil, eggs, and buttermilk. Mix until smooth.
  3. Divide the batter evenly between the pans and bake for 30–35 minutes or until a toothpick comes out clean.
  4. Allow cakes to cool completely before removing them from the pans.
  5. For the glaze, whisk together powdered sugar, strawberry puree, milk, and vanilla until smooth.
  6. Assemble by layering the cakes with glaze in between and generously pouring glaze on top.
  7. Decorate with fresh strawberries and let set for about 20–30 minutes before serving.
