  • 2 pounds ground turkey
  • 1 large yellow onion, chopped
  • 34 large garlic cloves, finely chopped
  • 1 yellow, red or green bell pepper, seeded and coarsely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1 bay leaf
  • 24 ounces store-bought salsa verde
  • 1 (4-ounce) can diced green chiles
  • 2 cups low-sodium chicken broth
  • 2 (15-ounce) cans of white beans, drained
  • Chopped cilantro
  • Chopped red onions or sliced scallions
  • Grated cheese
  • Sour cream or plain yogurt
  • Sliced avocado
  • Lime wedges

Instructions

  1. Heat 1 tablespoon of the oil in a large heavy pot over medium-high heat. Add the ground turkey, season with a pinch of salt, and cook until it loses its pink color—about five minutes. Use a wooden spoon to stir and break up any lumps. Once cooked, transfer the turkey to a bowl and return the pot to heat.
  2. In the same pot, heat the remaining tablespoon of oil over medium heat. Add the chopped onion, garlic, bell pepper, and jalapeño. Sauté until they are tender and lightly browned—around four to five minutes. Add in the spices: coriander, cumin, oregano, and salt. Cook for another thirty seconds while stirring.
  3. Return the cooked turkey to the pot. Add the bay leaf, salsa verde, canned chiles, and chicken broth. Reduce heat to low simmer and cook gently without covering for about forty-five minutes.
  4. Stir in the drained white beans into your chili mixture after forty-five minutes. Allow everything to simmer gently for an additional twenty minutes.
  5. Serve your chili in bowls topped with cilantro, onions, cheese, avocado, and/or sour cream according to preference.
