  • 2 medium-sized oranges
  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Boil the washed oranges in water for about 30 minutes until soft, then let cool.
  2. Cut the oranges in half, remove any seeds, and blend them into a smooth puree.
  3. In a food processor, combine the orange puree, sugar, almond meal, ground pistachios, baking powder, and salt. Blend until well mixed.
  4. In a large bowl, whisk the eggs until frothy and mix in the orange-nut mixture until smooth.
  5. Preheat the oven to 180°C (350°F) and grease or line a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean from the center.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
