  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F). Line a 23 cm (9-inch) springform pan with parchment paper and lightly grease the sides.
  2. Boil the oranges in water for about 60 minutes until soft. Let cool, remove seeds, and puree until smooth.
  3. In a large bowl, whisk eggs and sugar until pale and thickened. Stir in the orange puree.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and sea salt. Gently fold this mixture into the wet ingredients until just combined.
  5. Pour batter into the prepared pan and smooth the top. Bake for 50 to 60 minutes until set; a skewer inserted should come out clean.
  6. Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.
