  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 envelope onion soup mix
  • 1 cup shredded cheddar cheese (optional)
  • 1–2 cups frozen mixed vegetables (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. In a large bowl, combine the cream soups, water, and instant rice; mix well.
  3. Pour the mixture into the prepared casserole dish.
  4. Top with raw chicken breasts and sprinkle onion soup mix evenly on top.
  5. Cover with aluminum foil and bake for 60 minutes without lifting the foil.
  6. Check for doneness; chicken should reach an internal temperature of 165°F (75°C) and rice should be tender.
  7. Optionally broil uncovered for an additional 3–5 minutes for a golden top.
  8. Let rest for 5–10 minutes before serving.
