  • 8 onions
  • 2 garlic cloves
  • 50g butter
  • 1200ml beef stock (or chicken/vegetable broth)
  • 15g fresh thyme
  • 400g baguette
  • 150g Comté cheese
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Peel and slice the onions. Heat olive oil in a large saucepan over medium heat. Add onions and salt.
  2. Cook onions slowly, stirring occasionally until pale golden and soft (about 30 minutes).
  3. Add sliced garlic and butter; cook for another 5 minutes until fragrant.
  4. Pour in beef stock and add thyme leaves. Simmer for 10 minutes to meld flavors.
  5. Adjust seasoning as needed.
