  • 1 cup granulated sugar

  • 1/2 cup freshly squeezed lemon juice, about 4 lemons
  • 3 large whole eggs
  • 3 large egg yolks
  • 1 cup plus 2 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup freshly squeezed lemon juice, about 4 lemons
  • Salt
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Zest and juice the lemons to yield about 1/2 cup of fresh juice.
  2. Prepare lemon curd by creaming room temperature butter with sugar, salt, and zest. Add eggs one at a time, then stir in lemon juice. Cook over low heat until thickened, then cool.
  3. Create the lemon filling by whisking whole eggs, yolks, sugar, zest, lemon juice, and salt in a double boiler until thickened. Cool in the refrigerator.
  4. In a mixer, beat egg whites until soft peaks form; gradually add sugar until stiff peaks form. Fold into the chilled lemon filling.
  5. Whip heavy cream to stiff peaks and gently fold into the mixture along with the homemade lemon curd.
  6. Chill in serving cups for at least one hour before serving.
