  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies (divided)
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the unsalted butter and let it cool slightly.
  3. In a large bowl, combine melted butter with granulated sugar until smooth. Add eggs and vanilla extract, mixing well.
  4. In another bowl, whisk together flour, cocoa powder, and salt. Gradually incorporate the dry mixture into the wet ingredients without overmixing.
  5. Fold in half of the crushed peppermint candies and chocolate chips if using.
  6. Spread the batter evenly in the prepared pan, topping with remaining peppermint candies.
  7. Bake for 30–35 minutes until a toothpick comes out with moist crumbs.
  8. Allow to cool completely before lifting out and cutting into squares.
