  • 1 salmon fillet
  • 2 medium potatoes, peeled & diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp honey or maple syrup
  • Salt & pepper to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, salt, and pepper; spread on a baking sheet and roast for 25-30 minutes until golden.
  2. In a skillet over medium heat, melt butter and add smashed garlic. Season the salmon fillet with paprika, salt, and pepper; cook skin-side down for about 4-5 minutes per side until cooked through.
  3. Steam baby carrots for about 5 minutes until tender. In a small pan, melt butter with honey; toss the carrots in this glaze for 1-2 minutes.
  4. Steam broccoli florets for 3-4 minutes until bright green and tender-crisp; sprinkle lightly with salt.
  5. Assemble by placing the salmon alongside roasted potatoes, glazed carrots, and steamed broccoli on a plate to serve hot.
