  • 500g chicken breast, cubed
  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 300g fresh asparagus
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 200g jasmine rice
  • 400ml water
  • Pinch of salt
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 tbsp sesame oil

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Combine with 400ml water and a pinch of salt in a pot. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until tender.
  2. Heat olive oil in a separate pan over medium heat. Add asparagus with salt and pepper; roast for about 8-10 minutes until tender-crisp.
  3. In a wok or large skillet, heat sesame oil over high heat. Sauté minced garlic for about 30 seconds until fragrant.
  4. Add cubed chicken and cook until golden brown (5-7 minutes).
  5. Add sliced mushrooms and bell pepper; sauté until softened.
  6. Stir in soy sauce, oyster sauce, hoisin sauce, and cornstarch mixed with water; cook until the sauce thickens.
  7. Serve hot with rice and roasted asparagus garnished with chopped green onions.
