  • 450 g chicken breast
  • 600 g baby potatoes
  • 200 g mushrooms
  • 1 red bell pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried Italian herbs
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss halved baby potatoes with olive oil, garlic powder, dried oregano, salt, and pepper in a mixing bowl. Spread them on a baking sheet.
  3. Roast the potatoes for about 20-25 minutes until golden brown.
  4. Heat olive oil in a skillet over medium-high heat. Season chicken cubes with salt, pepper, paprika, and Italian herbs before adding them to the skillet.
  5. Cook until golden brown and cooked through; then add garlic, sliced mushrooms, and diced red bell pepper. Cook for an additional 5-6 minutes until vegetables are tender.
  6. Serve warm garnished with fresh parsley alongside roasted potatoes.
