  • 4 Garlic Cloves
  • 1 tbsp Fresh Ginger Root, grated
  • 1 Medium Red Onion
  • 2 Habanero Chilies
  • 2 tbsp Tomato Paste
  • 2 tsp Smoked Paprika
  • 400 g Canned Plum Tomatoes
  • 400 g Fresh Spinach

Instructions

  1. Heat vegetable oil in a saucepan over medium heat.
  2. Sauté minced garlic, grated ginger, sliced onion, and chopped chilies for about 3 minutes until fragrant.
  3. Stir in tomato paste and smoked paprika; cook for an additional minute.
  4. Add canned tomatoes (with juices) and salt; cover and simmer for 10-15 minutes until slightly reduced.
  5. Stir in roughly chopped spinach until wilted (about 2-4 minutes).
  6. Serve warm alongside rice or plantains, garnished with coriander or pumpkin seeds.
