  • 1 lb sirloin steak (or steak tips), cut into bite-sized pieces
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini
  • 2 cups milk (whole or 2%)
  • 1 cup beef broth
  • ½ cup shredded mozzarella cheese
  • Fresh parsley for garnish
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 tsp Dijon mustard (optional)
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Season the steak with salt and black pepper.
  2. In a skillet over medium-high heat, heat olive oil and sear the steak for 2–3 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, melt butter over medium heat, add minced garlic, and cook for 30 seconds until fragrant. Stir in flour to form a roux for another minute.
  4. Gradually whisk in milk and beef broth until smooth. Add cheddar cheese, Dijon mustard (if using), and paprika until creamy.
  5. Cook the tortellini according to package directions but slightly undercook them. Drain well.
  6. Grease a baking dish and combine tortellini, seared steak, and cheese sauce in it; gently stir to mix. Top with mozzarella cheese.
  7. Bake uncovered for 20–25 minutes until bubbly and golden. Garnish with chopped parsley before serving.
