  • 1 cup full-fat yogurt
  • 2 cups basmati rice
  • 1 large yellow onion, thinly sliced
  • ½ cup ghee, melted
  • Fresh herbs (cilantro and mint)
  • Spices (garam masala, cayenne, turmeric, cumin seeds)

Instructions

  1. Marinate the chicken: Blend marinade ingredients and coat the chicken. Let it rest for at least 1 hour.
  2. Prepare onions: Heat peanut oil in a pot and fry sliced onions until golden brown. Set aside.
  3. Cook rice: Rinse and soak basmati rice; boil with spices until slightly tender, then drain.
  4. Layer ingredients: In the same pot, layer half of the rice, followed by marinated chicken and fried onions. Repeat layers finishing with rice on top.
  5. Add ghee and saffron milk: Drizzle melted ghee and saffron-infused milk over the top layer.
  6. Cook slowly: Seal tightly and cook on low heat for 35-40 minutes until chicken is fully cooked.
  7. Serve: Let rest for 10 minutes before fluffing up the biryani with a fork.
