  • 2 tbsp Dijon mustard
  • 1 cup finely chopped mushrooms (cremini or button)
  • 1 tbsp butter
  • 2 cloves minced garlic
  • 1 tbsp fresh thyme leaves
  • 3 slices turkey
  • 1 sheet puff pastry
  • 1 egg yolk (for egg wash)
  • Salt and pepper to taste

Instructions

  1. Sear the seasoned beef filet in olive oil for 1-2 minutes on each side until browned. Brush with Dijon mustard and let it rest.
  2. Prepare mushroom duxelles by sautéing garlic and thyme in butter, then adding chopped mushrooms until moisture evaporates. Let cool.
  3. Layer turkey slices slightly overlapping on plastic wrap, spread mushroom mixture over them, place rested beef on top, and roll tightly to form a log. Chill for 15 minutes.
  4. Roll out puff pastry, remove plastic wrap from the beef log, wrap it in the pastry, sealing edges with an egg wash.
