  • 3 cups cooked rotini or penne pasta
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of half a lemon

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water to cool.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice.
  3. In a large mixing bowl, combine cooked pasta with cherry tomatoes, cucumber, bell pepper, red onion, kalamata olives, and feta cheese.
  4. Pour the dressing over the salad mixture and toss until evenly coated.
  5. Chill in the refrigerator for at least 30 minutes before serving. Garnish with parsley.
