  • 1 lb ground beef (or ground turkey)
  • 23 roasted green chiles (like Hatch or poblano)
  • 1 large potato (peeled and diced)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 medium tomatoes (diced)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)

Instructions

  1. In a skillet over medium heat, warm olive oil and sauté chopped onion until translucent. Add minced garlic and cook for another minute.
  2. Increase heat to medium-high and add ground beef or turkey; cook until browned while breaking it apart.
  3. Stir in diced tomatoes, potatoes, and chopped roasted green chiles. Mix well before adding the broth or water.
  4. Cover and reduce heat to low; simmer for about 20 minutes until potatoes are tender.
  5. If using peas, stir them in during the last few minutes of cooking. Adjust seasoning if necessary.
