  • 3 cups cooked chicken (cubed)
  • 8 ounces cream cheese (room temperature)
  • 4 ounces canned green chilis
  • 3 cups shredded cheddar cheese
  • 8 large flour tortillas

  • diced tomatoes (for topping)
  • avocado (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a 9' x 13' baking dish with cooking spray and spread 1 cup of enchilada sauce on the bottom.
  2. In a bowl, mix together cooked chicken, cream cheese, green chilis, and 2 cups of cheddar cheese until well combined.
  3. Fill each tortilla with approximately ½ cup of the chicken mixture and roll tightly. Place seam side down in the prepared baking dish.
  4. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheddar cheese.
  5. Bake uncovered for about 30 minutes or until the cheese is bubbly and golden brown.
  6. Serve topped with sour cream, salsa, diced tomatoes, and sliced avocado.
