  • 2 boneless, skinless chicken breasts
  • 300g Brussels sprouts, halved
  • 1 tbsp olive oil (for chicken)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & black pepper to taste
  • Juice of lemon
  • 1 tbsp olive oil (for Brussels sprouts)
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan
  • Salt & pepper to taste

Instructions

  1. Season the chicken with olive oil, garlic powder, onion powder, salt, pepper, and lemon juice. Grill on medium-high heat for 5-6 minutes per side until fully cooked.
  2. Toss halved Brussels sprouts in olive oil and seasonings. Roast on a baking sheet at 200C (390F) for about 20 minutes until crispy.
  3. For the sauce, melt butter in a saucepan over medium heat. Stir in flour to form a roux and gradually whisk in milk until smooth. Add minced garlic and simmer; then mix in grated Parmesan until creamy.
  4. Slice the grilled chicken and assemble your bowl by combining chicken and Brussels sprouts with the creamy sauce.
