  • 1 chicken breast, cut into chunks
  • 1 cup sweet potatoes, peeled and cubed
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional: chili flakes, lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with half of the olive oil, smoked paprika, salt, and pepper. Spread on a baking tray and roast for 20-25 minutes until golden and tender.
  2. Season chicken chunks with garlic powder, onion powder, salt, and pepper. Heat a grill pan over medium heat with remaining olive oil. Grill chicken for 6-8 minutes until charred and cooked through.
  3. In another pan, sauté broccoli in remaining olive oil for about 5-6 minutes until bright green and slightly tender; season with salt, pepper, and optional chili flakes.
  4. Serve by arranging grilled chicken alongside roasted sweet potatoes and sautéed broccoli on a plate. Drizzle with lemon juice if desired.
