  • 1 lb dry pinto beans
  • 1 yellow onion, halved
  • 4 cloves garlic
  • 1 bay leaf
  • Kosher salt
  • ½ green bell pepper, chopped
  • 1 scallion, chopped
  • ½ cup cilantro
  • ¼ cup red onion, diced
  • 1 tbsp apple cider vinegar
  • ½ bouillon cube (vegan chicken or vegetable base)
  • Juice of 1 lime
  • 2 tbsp avocado oil
  • 1 jalapeño, diced (optional)
  • 1 tbsp tomato paste
  • 1 cup kabocha squash or Yukon gold potatoes, cubed

Instructions

  1. Soak the dry beans in a large bowl of water for at least 8 hours or overnight until doubled in size.
  2. Drain and rinse the soaked beans. In a large pot, cover them with fresh water, add onion halves, garlic cloves, and bay leaf. Bring to a low boil and cook for about 30 minutes.
  3. Skim off foam and add salt; continue cooking for an additional 30–40 minutes until beans are tender. Discard onions and bay leaf.
  4. Blend garlic, peppers, scallion, cilantro, onion, vinegar, bouillon cube, lime juice, and salt to create the sofrito.
  5. In another pot over medium-low heat, sauté onion and jalapeño in avocado oil until softened. Stir in tomato paste and then add the sofrito mixture.
  6. Combine cooked beans with their liquid into the sautéed vegetables. Add kabocha squash or potatoes along with additional water if needed.
  7. Simmer for about 20 minutes until squash is tender; mash some beans lightly to thicken if desired.
