  • 10 Balls fresh mozzarella (bocconcini, ciliegine, 'cherry sized')
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound chicken (sliced thinly)
  • ¼ Cup olive oil
  • 8 basil leaves (fresh)
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • kosher or table salt (as needed)
  • flake salt (as needed)

Instructions

  1. Prepare your ingredients by washing the basil leaves and slicing the chicken into thin strips.
  2. Shape each mozzarella ball if needed and wrap with a piece of chicken.
  3. Top each mozzarella with a black olive as the 'pupil.'
